VILLEFRANCHE D\'ASTARAC<\/STRONG>

Situated on the hills of the Gers facing the chain of the Pyrénées mountains, local villagers Michéle and Henri Leglise make cheese and other delicacies from a herd of sheep called Lacaune.
These hardy ewes are the very same breed responsible for Roquefort cheese<\/A><\/STRONG>, which is made only from their unpasteurised milk in the eastern Midi-Pyrénées.
Everything needed is grown on the farm and all the work involved in making this delicious cheese is done by themselves. After many stages, the cheese is aged in their cellar and, dependent upon your taste, the younger cheese is more tender and the older, more aged cheese has a more pronounced flavour.
Their cheese is available to buy all year round along with a visit to the dairy, should you wish to see first hand the cheese making process.
Visits are by appointment only or alternatively you can purchase the cheese from the markets at Samatan (monday), Auch (thursday) or L\'Isle en Dodon (saturday).
